Family and Consumer Studies 21 – Nutrition – 3 units

Lecture 3 hours per week
Description: The importance of diet to health is emphasized. The functions, sources, and interrelationships of nutrients are explored. Current topics related to diet and health such as heart disease, cancer, diabetes, osteoporosis, weight control, and sports nutrition are discussed. Students evaluate their nutritional status by computer and body fat composition is assessed.
Family and Consumer Studies 48 – Food Safety and Sanitation – 0.5 units
Prerequisites: none
Lecture 8 hours plus 1 hour for exam
Description: This course covers how to safely purchase, receive, store, prepare and serve food utilizing the Hazard Analysis Critical Control Point System to reduce risks of food borne illnesses. The Food Handler Certification Examination is given as part of the course. Meets Los Angeles County code/ordinance # 97-0071 for food handler certification.
